The first thermal baths date from 1824, eventually becoming part of the Hôtel des Bains. Other mineral water fed baths were developed and by 1900 there were over 20 luxury hotels, a casino, theatre and funicular. The art noveau pump room and baths opened in 1903 and the most luxurious hotel (The Royal) was built in 1909. Evian attracted socialites and royalty, including British King George V and King Farouk of Egypt and has maintained its status as a high-class resort. Post-war it became the favourite holiday destination for French president François Mitterrand.

In addition to the pump room and Cachat spring, other notable buildings include the villa Lumière (now the town hall) and palais Lumière (once a thermal spa, now a conference and cultural centre). The town centre is ringed by public gardens and various floral displays are created every summer.
